Il Palazzo Della Torre è uno dei vini che ha reso celebre la cantina Allegrini in tutto il mondo. Rappresenta l’espressione piena e corposa dell’omonimo vigneto che circonda la Villa Della Torre, uno splendido palazzo rinascimentale divenuto simbolo e punto d’eccellenza dell’Amarone.

Il Palazzo Della Torre Allegrini nasce da uve Corvina e Rondinella, a cui si aggiunge una piccola percentuale di Sangiovese. A inizio settembre l’uva viene raccolta manualmente: una parte del raccolto viene lasciato appassire, mentre un’altra parte è destinata alla vinificazione immediata. A dicembre l’uva appassita, pigiata e diraspata, confluisce in acciaio inox assieme al vino prodotto dall’uva fresca, dove fermenta. Il vino matura poi in barrique di rovere francese di secondo passaggio per 15 mesi, quindi in bottiglia per altri 7, così da raggiungere un profilo aromatico ricco, pieno e vellutato.

L’eccellenza del Palazzo Della Torre Allegrini è frutto di uve di grande qualità, provenienti da un terreno ottimo e prestigioso, ma anche di un processo produttivo singolare, attento e sorvegliato. Di colore rosso rubino scuro, il grande fascino del Palazzo Della Torre è attribuibile al suo bouquet giocato su cupe sensazione di fiori secchi, pepe, tabacco e resina. In bocca rivela una buona struttura, ma anche un tocco morbido ed elegante e una persistenza sapida e fresca. Ideale compagno di risotti e paste classiche, questo vino si esprime al meglio in compagnia di buoni affettati, carne di maiale e formaggi stagionati, rivelando la sua anima tenebrosa e intensa, ricca di aromi e sentori entusiasmanti.
