This ancient and noble seasoning is obtained from the must of
native grapes, cooked on direct heat and aged in barrels of
fine woods. The Affinato, with at least 12 years of aging
is in the black packaging; the Extra vecchio, with at least 25 years of aging,
is in the gold packaging.
With its round but firm flavour it is great as
raw seasoning on boiled meat, fish dishes, omelettes and fried eggs,
to enhance the beef fillet or to stir up the risotto. The Extra
Vecchio is a product of excellence that reveals perfect density,
complexity and persistence.
Antica Acetaia La Secchia of Modena produces balsamic vinegar
for tradition and family vocation following scrupulously
the ancient recipe, made official in the Production Police document of
Protected Designation of Origin (May 2000).
