In Gaelic, Dair Ghaelach, pronounced "dar gayloch", means Irish oak. After 15 to 22 years in American oak barrels, this version was refined for ten months in new Irish oak barrels in Kilkenny County. According to Kevin O'Gorman, the master of maturation at Midleton Distillery, this ripening brings a greater amount of vanilla, caramel and toffee to Midleton. We will add, that the fruity character of this remarkable single pot still has also increased in intensity.
